We have 75 users and are in the process of upgrading our system and getting SQL Server. I was wondering how much RAM is needed per user? Thanks.

What do you mean, "per user"? That is an ambiguous question. "How much memory will each connection consume" is very different from "How much memory does my SQL Server need to support 75 users?" And the latter question is very ambiguous as well!
